Overview
This is a beautifully preserved coaching inn in the heart of Lavenham, Suffolk — one of England’s best-preserved medieval villages. Timber frames, centuries of history, and a kitchen that cooks at rosette level.
The kitchen needs a skilled Pastry Chef to own the pastry section. Desserts, breads and afternoon treats all matter here, and guests notice the detail.
The Role
You’ll run the pastry section day to day. You’ll make the desserts, breads and petit fours, plan your prep, and work with the Head Chef on new dishes that suit the season. Every plate that leaves your section should match the rosette standard of the kitchen.
Key Responsibilities
Run the pastry section and deliver every dessert to a rosette standard
Make breads, petit fours, ice creams and afternoon tea items in house
Help develop seasonal desserts and new dishes with the Head Chef
Plan prep, ordering and stock for the pastry section
Keep food safety, hygiene and allergen records up to date
Train and support junior chefs on pastry
Key Requirements
Proven experience as a Pastry Chef, or a strong Pastry Chef de Partie ready to step up
Rosette or fine dining experience strongly preferred
Strong classical pastry skills, with bread and chocolate work a plus
A real eye for detail and consistent presentation
Organised, calm and able to work on your own
Level 2 Food Safety or above
