Overview
An established seafront hotel in Clevedon, North Somerset, is looking for an experienced Head Chef to take the lead on its kitchen operation. The hotel has a strong reputation for quality food and consistent standards, serving guests across its restaurant, bar and events spaces, and is looking for a chef ready to take full ownership of the kitchen and shape its future direction.
This is a fantastic opportunity for a strong Sous Chef ready to step up, or an experienced Head Chef looking for their next challenge, in a well-regarded hotel with genuine scope to make the role their own.
The Role
As Head Chef, you will take full responsibility for the kitchen operation, from menu development and food quality through to team leadership, cost control and compliance. You will work closely with the General Manager to plan menus, manage events and forecast demand, while building and developing a strong, motivated kitchen brigade.
Key Responsibilities
Taking overall responsibility for the kitchen operation, food quality and presentation
Leading, recruiting, training and developing the kitchen brigade
Planning and delivering seasonal menus across restaurant, bar and event offerings
Controlling food costs, GP margins and stock management
Managing supplier relationships and negotiating pricing
Working closely with the General Manager on menu planning, forecasting and events
Ensuring full compliance with food hygiene, health and safety, and allergen regulations
Maintaining consistently high standards across all kitchen sections and service periods
Key Requirements
Proven experience as a Head Chef, or a strong Sous Chef ready to take the next step up
Experience within hotel or multi-outlet hospitality environments is preferred
Excellent leadership, organisation and communication skills
Strong understanding of food costing, GP management and stock control
Up-to-date knowledge of food hygiene and health & safety legislation
Ability to develop and deliver high-quality, seasonal menus
A flexible approach to working hours, including weekends and events
