Overview
A luxury country house hotel in the rolling Pembrokeshire countryside is looking for two front of house professionals. The hotel holds five AA red stars and a Michelin Key. It has 25 rooms and suites set in gardens, meadows and woodland.
Food is at the heart of the hotel. Its fine dining restaurant serves tasting menus and is listed in the Michelin Guide, and a relaxed brasserie serves lunch and dinner every day. The kitchen uses produce from the hotel’s own gardens. Guests expect polished, warm and precise service, and the team takes real pride in delivering it.
The Role
There are two roles. The Chef de Rang / Head Waiter will lead a section in the fine dining restaurant. You will guide guests through the tasting menus, run your section to a very high standard and support the junior team. The Restaurant & Bar Supervisor will run the floor and the bar on shift across the brasserie, bar and lounge. You will brief the team, look after guests and keep service smooth. Both roles work a rota that includes evenings and weekends. The hotel is rural and no accommodation is offered, so you will need your own transport.
