|Main duties and responsibilities : Constantly demonstrate, develop and maintain agreed food standards within the kitchen. Constantly aim to improve the standard of your cooking.
Produce mis en place for each day and the following dayâ€™s serviced to ensure that the next shift has adequate mis en place.
Contribute towards menu planning & costing as requested.
Report any maintenance issues to the Head Chef. Regularly monitor progress through Head Chef through to satisfactory completion of the problem.
Maintain food safety procedures, particularly food temperatures, food labelling, high risk food temperatures and cleaning schedules, ie up to date and completed on a daily basis.
Ensure that fridges and equipment used during shifts are regularly cleaned.
Make every effort to minimise waste.
Raise orders of required foodstuff to Head Chef to ensure that subsequent shifts have adequate provision.
Adhere to procedures regarding daily spend and kitchen budgets, wastage, staff feeding and kitchen transfer logs.
Be flexible with regards to working different shifts and working within all areas of the kitchen to build up knowledge and skills and create maximum efficiency.
Make every effort to meet customer expectations.
Take effective action on customer complaints to achieve customer satisfaction, reporting both compliments and complaints to the Head Chef together with details of actions taken.
Assist in the training and coaching of trainee chefs as requested.
Take every opportunity to improve your own knowledge and skills in the kitchen.
Be aware of the internal and external customer at all times and adopt the appropriate professional approach to both.
Treat people how you would be expected to be treated yourself.
Take pride in what you do, your department and what we have to offer.
Adhere to the Companyâ€™s rules regarding appearance and personal hygiene at all times.
Ensure that the restaurant and kitchens are maintained in a high standard of cleanliness
|Essential criteria : You should have a stable background of working as a Chef de Partie in (all fresh) kitchens with some experience in fine dining (up to 2 Rosette would be advantageous) but banqueting experience for more than 300 people is essential|
